Wüsthof 2-Stage Knife Sharpener Description:
Safe and easy to use, this two stage knife sharpener requires nothing but some easy strokes to keep blades sharp. Its V shaped cutting head with two crossed carbide blades puts a fast edge on knives. Simply place the gadget on a flat work surface and hold the E Z grip handle with one hand and the knife handle with the other. Put the knife blade completely into the slot at a 90 degree angle to the sharpener and pull down and back three or four times to sharpen. After setting the knife’s edge with the carbide side, use the unit’s ceramic side to nicely finish the edge. The gadget also comes equipped with a fitted scissors sharpener. To use, stand the sharpener on end with the non skid rubber pad on the work surface and repeat the same procedure as if sharpening a knife. A “floating” round sharpening rod conforms to the exact angle of right or left handed scissors, sharpening both blades simultaneously. The two stage knife and scissor sharpener measures eight by three by 1 1/2 inches.

This sharpener works very well on all my knives and is easy to use. It doesn’t require that you maintain a twenty degree angle it does it for you. Also it does not require oil or water. You just swipe the blade through some times and that is it. It is really perfect.

I knew that my sharpening steel expertise weren’t ideal. I was able to get a sharp blade but it did not seem to hold long. When I saw that Wusthof had a sharpener, I knew it could be worth having. Already knowing the quality of their merchandise, I was certain this could be the same.

After passing my knives through some times, the sharpness was back. No fuss, no muss. Easy to hold when placed on the counter and no angle to figure out.

The only down side is that there aren’t information or advice included. I do not know if this should be used every time I want to sharpen my knives or just sometimes. As well, I question if I’m sharpening my scissors properly since I had to figure it out on my own. Possibly the Wusthof website has more info. Otherwise, it’s great.

I have been using honing stone and I’m also proud for being able to sharpen all my knives with the stone except for the serrated ones. Then I gave this thing a attempt and wow ! it works, steadily and with ease. When using a honing stone, it’s hard to preserve the correct edge angle, and this device takes the guess work out. A friend of mine thinks his buck knife is sharp till he reset the edge with Wustof’s stage one carbide edger , then hone it with the stage two ceramic sharpener. Then he has been surprised with how his “new” knife shred paper like razor. Then we tried with the scissors and learned that the specially shaped slot should prevent one from inserting the scissors in a wrong way right handed and left handed scissors. Quality is great. Comes with non slip padding on the grip also as some number of other sides so you may be able to grip it and hold in down on the counter top in some number of positions/ways steadily.

Downside is that it’s a bit pricey. There are cheaper ones out there which I believe could work likewise but could most likely lack the little quality touches here and there.
